About Wine
Shavkapito is an endemic variety from Kartli region of Georgia. The name comes from "shavi" which means black. Goga Tevzadze, the winemaker at Tevza, is on a mission to explore, preserve and promote indigenous varieties from Kartli. This particular year he played with a longer maceration and a more oxidative style resulting in a lovely wine full of ripe and stewed fruit notes. Only 1200 bottles produced. It is a bit crazy and alive but who among us isn't?
Wine Making & Technical Details
Grapes are handpicked at optimalripeness and gently transported from 14-year-old vineyards (30km distance) to the winery and directly crushed into qvevri. Wild fermentation starts at the room temperature. Spontaneous fermentation stops when wine is dry, which is followed with natural MLF fermentation. After analyzing and tasting the wine we fill up each individual Qvevris from the reserved lots of the same wines. Maceration and skin contact from 3 to 4 weeks.
Tasting Notes
Harmonious aromas of dried black plums and cherry flavors. Flavlorful and lively, with dried Cornelius and forest
berries. Distinctive varietal character.
